About This Coffee

This natural processed coffee is from the Suke drying station in the Shakiso area of Ethiopia's Guji zone, at 2,000-2,150 meters altitude. It is sourced from approximately thirty-five small producers in the Shoondhisa sub-kebele through the Sookoo Coffee project led by producer Ture Waji. The coffee features Gibirinna 74110 and Serto 74112 varieties. Cherries are slowly dried whole on African beds using the natural method, allowing for sugar concentration and revealing the region's aromatic complexity. All cherries come from organic farms.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations. The first permanent cafe opened on Beaubien Street in 2016, and roasting now takes place on a Loring S15 Falcon at the Rue Masson location.
