This black honey processed coffee is from producer Andres Cardona in Colombia. The coffee is grown at 1650 meters altitude and features Castillo and Colombia varieties. Luna Azul, meaning "blue moon", is named for its strong flavor of blueberries and dark chocolate. The processing involves one week of fermentation in cherry in open tanks, then depulping without water to retain the mucilage for increased sweetness. The beans are dried on raised beds for 1 to 3 weeks until reaching 11% moisture. The flavor profile includes notes of pomegranate, blueberries, and black cherry.
