This single-lot Castillo from Finca Santa Monica in Armenia, Quindío, Colombia (1,400–1,450 masl) underwent a dry anaerobic co‑fermentation with dehydrated mandarin skin, then was gently washed and dried on raised beds. Flavor profile features orange zest, black tea, lavender, lemonade and a distinct mosaic-hops note. Roast: Light, light–medium body.
