Tome is a single-origin coffee from Ethiopia, sourced from the Guji region at an altitude of 2000–2250 meters. It is a natural (dry) processed coffee of the Heirloom variety, produced by the Oboleyan cooperative. The flavor profile is described as elegant/thoroughbred with notes of plum and honey. Suitable for espresso and soft/filter brewing methods.

La Torref de Fersen

Frederic Fersen established this roastery in Strasbourg, in the Alsace region of eastern France near the German border, building one of the area's premier specialty coffee operations. The name combines torref, short for torrefaction (roasting), with the founder's own surname, and the approach leans toward light to medium profiles designed to showcase origin characteristics from Ethiopia, Kenya, Colombia, Guatemala, Brazil, and other growing regions. The roastery and cafe combination includes a retail shop selling beans and brewing equipment, and Frederic maintains direct relationships with coffee producers where possible. Coffee tastings and workshops are offered on site, and a wholesale program supplies cafes across the Strasbourg and wider Alsace area, bringing specialty coffee to a region better known for its wine tradition.
