This Pink Bourbon comes from several producers across the Tolima, Huila, and Caldas regions of Colombia, sourced through El Vergel Estate and the Forest Coffee network established by the Bayter family. The coffee undergoes an innovative experimental processing method: after manual sorting of ripe cherries, it receives 24 hours of pre-fermentation followed by 24 hours of cherry fermentation. Once depulped, the seeds undergo 5 days of anaerobic co-fermentation with mucilage, enriched with yeasts and passion fruit flavors. The coffee is then mechanically dried for 10 days and stabilized for 5 days in plastic bags to ensure moisture uniformity and optimal aroma preservation.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
