This coffee is grown at the El Diviso farm in Bruselas, Huila, Colombia by producer Nestor Lasso. It is a Bourbon Aji variety cultivated at 1750 meters above sea level and processed using a thermal shock method involving anaerobic fermentation, oxidation, and hot water washing. The flavor profile includes herbal and floral notes like lemongrass, spicy hints reminiscent of ginger beer, and citric lime, with a wine-like quality.
